Many places, including school cafeterias and restaurants, utilize warewash technology. Warewash uses high temperature and high water velocity to clean dishes faster than normal dishwashing. This makes it a very economical way to wash dishes and utensils. While cost is a very important factor, you need to pay close attention to the bottom line. Here are 3 tips to get your dishes clean the first time: 

  • Pre-Soak - make sure to pre-soak heavily coated items to help the process. Utensils can be placed in a silverware soak to help loosen food particles.
  • Detergent - Choosing the right detergent can make all the difference in your warewash program. Make sure to pick the appropriate detergent for your machine and, if possible, install a dispensing system to avoid human error.
  • Loading - Do not overload your machine. It's better to do two racks once, than to do one overloaded rack two or three times and still have dirty dishes.
